one of Israel's finnest treet is the pistacia penticus. Its amazing and very widespread thoghout Israel, the tree is an evergreen shrub, 4 meters high and it's from the pistacio family of trees – which is also a very Israeli likeable food. It is native throughout the middle east – morocco, iraq, greece, liberia, Israel etc. The name is originaly from greek and it means "to chew". In Hebrew it's called ELLAT HA MASTIK. In Europe this tree is very well admired and concidered to be a European Union PDO (protected spicies). The tree also manifacture gum – which also entouched with it's name (chewing) and also in the Hebrew name – MASTIK which is gum in English. Mastic gum is principally used in mastic chewing gum. This tree is soncidered to be a great spice in Israel and the middle east. Greeks make liquors out of it, cakes, gum, pasteries such as festival breads, for example the sweet bread tsoureki and the traditional New Year's feast , desserts and more. Mastik is a key ingridient for DONDURMA which is a special Turkish dessert and also RAKATLOKUM – Turkish delights are also marked as this tree's product. It also has medecine values for dermatologic problems.
